The spicy mix of cheese, beans, corn, cilantro, and onion makes an incredibly flavorful quesadilla that’s perfect for dipping in some cool sour cream or salsa.
Preheat the broiler. Spray the cookie sheet generously with SprayLite Natural cooking spray.
Sprinkle 1/4 cup cheese on each of the 4 tortillas; spread with refried beans and salsa. Top with remaining cheese and tortillas.
Spray the tops of the quesadillas with cooking spray. Broil (2 to 3 inches from heat) until lightly browned, 1 to 2 minutes. Remove cookie sheet from broiler; turn quesadillas, spray with SprayLite Butter Flavor spray and broil as directed above.
Cut quesadillas into wedges. If desired serve with sour cream and shredded lettuce.
